Provenance

At Trentina, we pride ourselves on the British accent our Italian inspired menu has. We aim to showcase some of the best locally grown, reared and crafted ingredients, from producers who share our love of Italian cuisine.


Both our charcuterie from Cobble Land Cured in Islington, and meat from Dunwood Farm in Staffordshire, are created by producers who really care about their craft. Cobble Lane use traditional methods with the finest British reared animals, focusing on farms that have a very high level of animal welfare. The same is true of Dunwood Farm, who focus on rare bread beef and free range pork, using whole carcass butchery, emphasising the importance of nose to tail sustainability.


For the pasta, we use Organic 00 flour from Shipton Mill near Tetbury in the Cotswolds. They work tirelessly to help preserve rare grains, whilst also using hydroelectricity to create an eco friendly model.


Even our Stracciatella and Mozzarella come from British dairy herds, providing the freshest, tastiest cheese.


Inevitably there are some products that have to come from Italy. However we believe that not only is it ethical to shop local, but there are world class producers on our doorstep that we are proud to work with.
